Italian Sausage Stew

I got this recipe from a friend and then tweaked it to my own tastes. Oh my, this dish is so easy and flavorful!

Ingredients:

  1. Using a large deep and wide skillet. Take each sausage and squeeze out of the casing enough to make Small balls and drop into the skillet. Cook gently until they are golden brown, drain most of the oil.

  3. Return to the stove, add all minced veggies, stirring well. Then add 3 cans diced tomatoes and 2 cans of tomato sauce.
  4. Add all seasonings plus sugar and grated cheese.
  5. Let this simmer for 30 minutes.
  6. Now in a a large pot cook pasta half way.
  7. Cut in slices both squashes, then into triangles
  8. Add squashes on the top, stir in a boil for only 5 minutes.
  9. Take the same and sausages and pour over the pasta.

  11. If not enough sauce, add water.
  12. Serve with shredded Parmesan cheese on top!

Looks like a hearty recipe for cooler weather. I'll have to remember this one when it isn't so hot outside. Thanks for sharing.

It's been added to the ingredients. 1 yellow and 1 zucchini squash, more if desired.

Yes, there is 1 medium yellow and 1 medium zucchini squash, sliced and cut into triangles. You can add more if you like. I always add another of each, when reheating leftovers! But, give them a quick steaming first!
