Lemon Berry Cake

This delicious and moist cake is perfect to serve for any occasion! You cannot go wrong with this Lemon Raspberry Blueberry Cake.

Cook Time: 50 minutes

Total Time: 1 hour

Yield: 1 loaf

Ingredients:

Steps:

  1. In a bowl, add your dry ingredients (flour, baking powder, salt).*
  2. In another bowl whisk olive oil, vanilla extract, eggs, greek yogurt, sugar, and lemon zest.
  3. Slowly incorporate dry ingredients to wet ingredients and whisk.

  5. Then slowly incorporate your fruits. I used frozen blueberries and raspberries.
  6. Line loaf pan with parchment paper and bake at 350 degrees F for about 50 minutes, or until ready. Allow to cool down before serving.

*Optional: Add chia seeds and flax seeds.
