The completed Pancake MuffinsI am trying to eat healthier and to help accomplish that goal, I have been meal prepping. I still have quite a sweet tooth though. It is hard to keep most sweet foods in the house because I will binge on them. I found this pancake muffin recipe on Pinterest and it is the perfect sweet treat when I am having cravings. I store the muffins in meal prep containers and freeze. When I want 1-2, I defrost and reheat in the microwave. Chocolate chip and blueberry are delicious. I look forward to trying other toppings too.

Supplies:

  • 2 cups pancake mix
  • water
  • chocolate chips
  • blueberries
  • flaxseed
  • powdered sugar (optional)
  • syrup (optional)
  • other toppings of your choice
Ingredients for Pancake Muffins
 

Steps:

  1. Mix pancake batter, according to box directions. Incorporate flaxseed if you choose. Pour batter into each muffin hole, filling 2/3-3/4 full. Add blueberries, chocolate chips, or other toppings. Push these ingredients down into the mixture so theyll be throughout when done.
  2. Unbaked muffins in tins.
     
  3. Bake at 350 degrees F for approximately 15 minutes. Remove from oven and serve! Add powdered sugar on top if you choose. Dip in pancake syrup for extra sweetness.

No offense but where's the healthy part? Sugar, syrup, chocolate chips, lots of carbs and 2 tsps of sugar per 1/2 cup in the mix it's self. There's nothing healthy here except the few blueberries.

When people say no offense, they ALWAYS mean to offend. Not that I owe you any explanations, but the healthy part is preparing pancakes in SMALLER portions. Instead of fixing stacks of pancakes, I can just grab 2-3 of these small muffins & pair it with yogurt or other fruit. Aside from the blueberries, which are healthy!

One of the most important steps to losing weight & changing your unhealthy eating habits, is learning to eat those smaller portions. And if you dont want these, simply dont fix them. Or use organic ingredients, whole wheat pancake mix, nuts, other fruit, & honey instead of syrup. Heck, even add greens into the mixture.
