Pork Tenderloin Roast on foilA few days ago, I scored this boneless pork loin for $1.49/lb at Vons/Safeway. This 3 lb pork tenderloin roast was only $5! I used half for tonight's quick and effortless dinner while balancing laundry. We have lots of leftovers! For this recipe all you need to do is mix in some of your favorite spices, rub on the pork tenderloin, pan sear and toss in the oven to bake.

Prep Time: 5 minutes

Cook Time: 30-40 minutes

Total Time: 35-45 minutes

Yield: 4-6 people

  1. Mix your choice of spices together in a bowl. I used garlic powder, thyme, oregano (I only had a little left), dash of salt and pepper. Then mince your garlic cloves.
  2. mixed spices in bowl

  3. Rub the spices on your pork tenderloin. Since this was way too big, we decided to half it and prepare the other half later.

  5. On medium high heat, add olive oil and some minced garlic. Allow to caramelize then add your pork tenderloin roast in. Pan sear for about 5 minutes per side or until golden.

  7. Meanwhile pre-heat your oven to 425 degrees F. Line baking sheet with foil. Place your pork tenderloin from the pan to bake for about 30-40 minutes or, until internal temperature reaches 160 degrees (or your desired wellness).

This sounds and looks absolutely delicious! The meat appears to be a pork LOIN roast, rather than a TENDERLOIN, which is much smaller & thinner. Tenderloins cook much more quickly than loin roasts due to their smaller size.

You can also cut one of these into boneless pork chops - or split it and have one smaller roast and several chops for different meals.
