Looking for a super easy, super yummy side dish for dinner? These hardly take any more time to prepare than instant mashed potatoes....but they are much better! So savory and delicious.


Total Time: About 15 minutes prep

Yield: 6 large servings


  • 5 lb potatoes, peeled and cubed 1-2 inches in size
  • 1/2 cup olive oil
  • 1 Tbsp salt
  • 1 Tbsp basil
  • 1 Tbsp garlic salt


  1. Peel and cube your potatoes. You will cube them about 1-2 inches in size.
  2. Place them in a large bowl. Add your olive oil and spices. Mix well. Spread evenly on a large cookie sheet.
  3. Bake at *400 for 40-45 minutes, or until fork tender. Enjoy!

Easy recipe for onion roasted potatoes.


  • 1 envelope onion soup mix
  • 4 large potatoes, cut into large chunks
  • 2 Tbsp. vegetable oil


Preheat oven to 450 degrees F. In large plastic bag, add all ingredients. Close the bag and shake to cover potatoes with soup mix and oil. Empty potatoes into a shallow baking pan. Bake 40 minutes until potatoes are tender.

Prep Time: 5 Minutes
Cooking Time: 40 Minutes

For the first time, we grew red potatoes in our garden, and they have been so good. This is my favorite way to prepare them. We are hooked!

For the two of us, I bake them in the toaster oven. It is light weight and portable, so I can put the oven out on the porch and bake without heating up the house. Its very convenient during the hot, humid summer we are having.

Total Time: 1 hour



  • red potatoes (washed and dried)
  • salt
  • pepper
  • garlic powder
  • olive oil


  1. Spray baking pan with Butter Pam.
  2. Cut potatoes into small wedges.
  3. Place in mixing bowl. Add salt, pepper and garlic powder to taste. Pour a little olive oil on potatoes until just coated with a little. Amount will depend on how many potatoes you are preparing. For this cooking, I used 1 tablespoon of olive oil.
  4. Spread seasoned potato wedges on the baking pan.
  5. Bake at 450 degrees F for 45-50 minutes, until potatoes are browned.

Preheat oven according to package directions for potatoes. Place frozen potatoes in a large self-sealing plastic bag. Combine cooking oil, garlic, paprika, and salt. Drizzle over potato wedges. Seal bag and shake to coat potatoes.

In shallow baking pan, heat 1 Tbsp. each butter and olive oil in hot oven. Remove pan from oven, stir in 4 large red-skinned potatoes, cut into wedges; and 4 garlic cloves, sliced.
