Rustic Apple Galette

This is my mother's recipe for delicious apple galette that really suits the welcoming of the Autumn season. I love the flaky crust on the outside, with an inside that becomes almost custardy from the juices of the baked apples. It's so easy to make, it's a beginner's recipe, but the taste will have people thinking otherwise. Give it a try!

Prep Time: 25 minutes, plus dough chilling time

Cook Time: 35 minutes

Total Time: 1 hour

Yield: 8 servings

Ingredients:

Steps:

  1. Cut cold butter into small pieces, then cut into flour until it's sand-like in texture.
  2. Add salt. Reserve about 1/2 a tablespoon of the heavy cream and water mixture (or milk, if you're using it instead), and pour the rest into the flour butter mixture. Mix until a dough forms.
  3. Pat dough into a ball and place in a plastic bag. Refrigerate 1 hour.
  4. Take dough out the refrigerator and roll while still inside the bag. Preheat oven to 375 degrees F.
  5. Peel and cut apples into halves, then scoop out the cores.
  6. Slice each halved apple into 6 pieces.
  7. Cut the sides of the plastic bag open. Roll the dough in between the sheets of plastic.
  8. Rolled out, it should be about a 12 inch round. Place on an ungreased baking sheet.
  9. Spread about 2 tablespoons of the sugar on the dough, keeping the edges clear.
  10. Reconstruct the apples so they are almost whole again. Place them on the sugared dough in the center.
  11. Reserve 1 tablespoon of sugar and pour the rest on top of the apples.
  12. Fold dough edges up and press into the apples.
  13. Brush the reserved cream/water (or milk) on the top, sprinkle with reserved sugar. Bake for about 35 minutes in preheated oven, until golden. Serve warm with whipped cream or vanilla ice cream. I like mine as is with a cup of black coffee!

You can cinnamon if you like, but out of respect to my mum, who made this recipe and passed it to me: no cinnamon. (She's never been a fan.) All recipes can become your own, so add cinnamon if you wish :)

Hi! Sorry it's not in there! I preheat to 375F, pop it in, cook it for 15 minutes, then bring it down to 350F for the remaining time...
