Can anyone tell what my Staffy is crossed with? She is 19 weeks old and seems to have a long nose, long legs, and small eyes. I don't think she is a full Staff, but can't think what she is crossed with.

With that pronounced 'top-knot' head, she's most likely mixed with Boxer. Do an image search using both breeds in your search term and I think you'll see what I mean.
I live in the UK now - I retired to my parents native UK after 40+years in the US breeding and raising AKC Boxers and doing breed rescue - I've seen many a Boxer-Staffie rescue that looked just like your dog.
