These are great for a holiday get together or any time. I prefer to use the dark Karo syrup over the light, but either one can be used. Very sweet and good!

Ingredients:

  • 6 medium yams or 2 (17 oz.) cans
  • 1/2 cup Karo syrup (dark or light)
  • 1/2 cup brown sugar
  • 1/4 cup cream
  • 2 Tbsp. margarine
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon

Directions:

Arrange yams in single layer in 9x13 inch baking dish. In heavy 2 qt. saucepan combine remaining ingredients. Stirring constantly, bring to a boil. Pour over yams and bake in 325 degree F oven for 30 minutes, basting frequently.

Servings: 6
Prep Time: 15-20 Minutes
Cooking Time: 30 Minutes

Ingredients

  • 1 large can or 2 small cans yams
  • 1/3 cup chopped pecans
  • 1/3 cup coconut
  • 1/3 cup brown sugar, firmly packed
  • 3 Tbsp. flour
  • 3 Tbsp. margarine, melted

Directions

Heat oven to 350 degrees F. Place drained yams in ungreased 1 1/2 qt. baking dish. In small bowl, combine remaining ingredients; blend well. Sprinkle over yams. Bake at 350 degrees F for 35-40 minutes or until bubbly.

Ingredients:

  • 1- 24 oz. can yams (Bruce's)
  • 1 Tbsp. margarine
  • 1/3 cup brown sugar and/or maple syrup
  • 1 cup small marshmallows

Directions:

Open a can of Bruce's Yams into a 1 1/2 qt. casserole dish. Add margarine, brown sugar and or maple syrup, then top with small marshmallows. Bake in 325 degree F oven for 30 minutes.

I'm typing this with my memory. I might be wrong about the brown sugar amount and even the oven temperature. You can also check the Web and type in Google for the recipe you're looking for.

Small amount of margarine and orange juice give these yams lots of flavor but little fat.

Ingredients

  • 3 medium yams (1 1/2 cups)
  • 1/4 cup brown sugar, packed
  • Ad

  • 1 tsp flour, sifted
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp orange peel
  • 1 tsp soft tub margarine
  • 1/2 cup orange juice

Directions

Cut yams in half and boil until tender, but firm (about 20 minutes). When cool enough to handle, peel and slice into 1/4-inch thickness.

Combine sugar, flour, salt, cinnamon, nutmeg, and grated orange peel. Place half of the sliced yams in a medium-sized casserole dish. Sprinkle with spiced sugar mixture. Dot with half the amount of margarine. Add a second layer of yams, using the rest of the ingredients in the same order as above. Add orange juice.

Bake uncovered in oven preheated to 350 degree F for 20 minutes.

Makes 6 servings--Serving size: 1/4 cup

Candied Yams

Ingredients

  • 8 large sweet potatoes, boiled in jackets, or 2 small cans yams + 1 large can yams placed in shallow pan
  • Ad

  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup syrup from can or water
  • 1 stick butter
  • pecans

Directions

Combine water or syrup from can, sugars, and butter; bring to a boil to thicken. Pour over yams. Bake 1 hour in 350 degrees F oven; baste often. Last 15 minutes, add pecans; baste.

Garnishes: Sprinkle with crushed pineapple. Add 3 tablespoons pineapple juice to baste. Use oranges, add 3 tablespoons orange juice to baste. Add coconut. Add marshmallows. Add sliced apples.
