Cheerios Breakfast Cookie


  • 2 eggs, beaten
  • 1/2 cup honey
  • 1/4 cup butter
  • 1 cup grated carrots
  • 1/2 cup raisins
  • 1/2 dried apricots, chopped

  • 1 cup walnuts, chopped
  • 1 cup flour
  • 1 cup rolled oats
  • 1 1/2 cup cheerios


Combine eggs, honey and butter and stir well. Add raisins, walnuts and apricots. Stir to combine. In separate bowl, combine flour, oats, 1/8 tsp nutmeg and 1/2 tsp cinnamon. Add this to the wet mixture and stir until everything is wet. Fold in cheerios. Drop by spoonfuls onto greased cookie sheet and bake at 350 degrees F for 15 minutes or until cookie is firm.
