Shrimp Cocktail Cups

Ingredients:

  • 1 can vegetable juice (24oz.) (like V-8)
  • 1/2 cup sliced green onions
  • 1 tsp. lemon juice
  • 2 cups frozen shrimp (thawed)

Directions:

In a saucepan, over high heat, combine vegetable juice, onion and lemon juice. Heat to boiling, reduce heat to low and cover. Simmer 5 minutes. Add shrimp and cover. Simmer 2 minutes more or until shrimp turns pink. Refrigerate at least 6 hours. Serve in chilled bowls.
