Lemon Whipples

Bronze Post Medal for All Time! 172 Posts

Ingredients

  • 1 box lemon cake mix (if you can find it, get the kind with pudding in the mix)
  • 1 reg. size container Cool Whip, thawed
  • Advertisement

  • 1 extra large egg or 1-1/2 large eggs
  • Plate of powdered sugar to roll cookies in

Directions

Mix ingredients. Take 2 spoons (dough will be sticky) and scrape them off each spoon into powdered sugar and roll. Bake on parchment paper or lightly greased baking sheet in 350 degree F oven for 11-14 minutes, depending on how chewy you want them and how your oven bakes.

Bake less time for chewy, lemony cookies, cook longer for cake-like cookies. If you like them chewy and lemony, start with about 10 minutes and pull them out. They will look glossy and underbaked but will firm up and be chewy. They are the best if they set a couple of days before eating.

What size Cool Whip would be "regular"? 8oz? 12?
Also, how do I measure out half of an egg?
