Campfire Chicken and Dumplings

Chicken and dumplings is a family favorite, and this simplified version is our classic camping standby. It's a healthy, well-rounded meal and very filling. This soup is also warm, which is good since it tends to get cold in the evenings where we camp.

Ingredients:

  • 2 (32 oz.) containers chicken broth
  • 2 (12.5 oz.) cans chunk white chicken, undrained
  • 1 (16 oz.) bag frozen mixed vegetables
  • onion (leftover from hamburgers)
  • celery salt to taste
  • Italian seasoning to taste
  • pepper to taste
  • 2 cups Bisquick (I use low-fat)
  • parsley to taste
  • milk

Directions:

Combine chicken broth, canned chicken (with juice), frozen veggies, onion, celery salt, Italian seasoning, and pepper in a cast iron stock pot. Cook over fire until broth starts to boil.

Mix Bisquick with parsley flakes and add milk until a sticky dough forms. Drop blobs of dough (dumplings) into soup broth, and continue simmering until dumplings are cooked through. Serve and enjoy!
