Mushroom and Almond Rice

Ingredients:

  • 1/2 cup sliced almonds
  • 2 Tbsp. margarine
  • 1 can sliced mushrooms, drained
  • 3 cups cooked rice
  • salt and pepper, to taste

Directions:

In large skillet, saute almonds in margarine until golden. Stir in remaining ingredients. Heat through. Serves 6.

Ingredients

  • 1 Tbsp. butter
  • 2 cup chicken broth
  • 2/3 cup fresh mushrooms, sliced
  • 1/4 cup almonds, sliced
  • 1 cup wild rice, uncooked

Directions

In a saucepan, over medium heat, combine all of the ingredients together. Simmer, covered, until all of the liquid is absorbed by the rice, about 25-30 minutes.
