Freezing Prepared Foods?

Does anyone have any general tips for freezing prepared foods? I have a new freezer in the garage and want to put it to work.

I bought one of the vacuum sealers that use special bags. The bags come on a roll or as seperate bags. They keep frozen food much longer. I have frozen bread for several months and it is like fresh. Be sure and freeze it before you vacuum seal it or it gets flattened by the vacuum sealer. They are expensive, but I got mine at the Goodwill for less than $5. I have saved a small fortune with it.

1. Divide into individual portions
2. Keep masking tape and marker in a kitchen drawer and use to label container with date and contents
3. Chill completely in the refrigerator before freezing because cold food freezes quicker and forms smaller ice crystals which results in better food quality when thawed
4. Keep a list attached to the freezer door to indicate what has been frozen and the date
5. Beside the name of the food, draw a line for every single portion added to the freezer
6. When you remove a portion, draw through a line so you will know how many portions are left
7. When you are uncertain what you want to eat, choose the food that has been frozen the longest

I have used the inexpensive vacuum sealer made by Reynolds wrap. I got it at Walmart. It made a tremendous difference in quality of frozen food.

You need to join this yahoo group it will answer any and all your questions about freezing they are very friendly people and I have learned sooooo much from them
