Southwestern Omelet

One of my husband's favorites! Very good with salsa!

Ingredients:

  • 1/2 cup onion, chopped
  • 1 jalapeno pepper, minced (I leave this out!)
  • 1 Tbsp. cooking oil
  • 6 eggs, beaten
  • 6 strips bacon, cooked and crumbled
  • 1 small tomato, chopped
  • 1 ripe avocado, cut into 1 inch slices
  • Ad

  • 1 cup Monterrey Jack cheese, shredded and divided
  • salt and pepper, to taste
  • salsa (optional)

Directions:

In a skillet, saute onion and pepper in oil. Remove with slotted spoon and set aside. Pour eggs into skillet, and cover. Cook over low heat for 3-4 minutes. Sprinkle with onion, pepper, bacon, tomato, avocado and 1/2 cup cheese. Season with salt and pepper. Fold omelet in half over filling. Cover and cook for 3-4 minutes, or until eggs are set. Sprinkle with remaining cheese. Serve with salsa, if desired.

Prep Time: 15-20 Minutes
Cooking Time: 6-8 Minutes
