In a pinch I'd probably use a dark rum with a little honey added.

Have a look in the cake decorating section of your supermarket. You should be able to buy imitation rum, brandy, etc here. It gives the flavor but not the alcohol content.

When it is in small quantities for a tart or pie, I have successfully taken a fruit juice and reduced it over med-high heat until it has the consistency of brandy.
