Quick and easy. What could be better?

Ingredients:

  • 2 eggs
  • 1 potato or hash browns
  • 1/2 lb. hamburger
  • chopped onion to taste
  • salt and pepper

Directions:

Wash and scrub one potato, peel if you want, I don't, cut into 1/2 inch squares, fry for a couple of minutes. If you use hash browns, add the same time as hamburger.

Add hamburger. Fry for a couple of minutes, then add the onion.

Cook until potatoes and hamburger are done, then add slightly beaten eggs.Mix in and cook just until done.

We like to serve with toast. This was my father-in-law's favorite supper.

Instead of hamburger I use bacon or sometimes breakfast sausage. I buy the pack of shredded potatoes from the store when they are on sale. First fry the bacon,drain, add potatoes and onions, last add the beaten eggs and last but not least I add shredded cheese.

Add toast and call them breakfast bowels. Hubby loves them.
