Carrot Nut Bread


  • 1 cup sugar
  • 3/4 cup cooking oil
  • 2 eggs (well beaten)
  • 1 1/2 cup all purpose flour
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cup grated carrots
  • 1/4 cup chopped nuts (or more if you desire)


Mix sugar & oil; add eggs. Sift flour, cinnamon, soda & salt together; add to sugar mixture. Stir in carrots & nuts. Bake in greased loaf pan at 375F degrees F for 45 minutes or until it tests done. Cool before slicing.


This freezes great for a later use.

Carrot Nut Bread II


  • 1 1/2 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup sugar
  • 1 tsp. cinnamon
  • 1/2 cup chopped pecans
  • 2 eggs, beaten
  • 3/4 cup vegetable oil
  • 1 cup grated carrots
  • 1 tsp. vanilla


Combine first 5 ingredients in a large bowl; stir in pecans. Combine eggs and remaining ingredients; add to dry ingredients, stirring just until moistened. Spoon batter into a greased and floured loaf pan. Bake at (preheated) 325 degrees F for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan and let cool on a wire rack. Yield: 1 loaf.
