Green Pea Salad

You thaw the frozen bag of peas in the refrigerator overnight. When you put the salad together the next day, you chill it and then serve. This should be eaten within one to two days unless you decide to freeze them again.

Ingredients:

  • 1 16 oz. bag of frozen peas (thawed in the refrigerator overnight)
  • 2 Tbsp. chopped green pepper
  • 2 Tbsp. chopped celery
  • 2 Tbsp. shredded cheese
  • 1 small jar pimentos
  • 1 Tbsp. chopped onion
  • 1 Tbsp relish or sweet relish
  • 2 hard boiled eggs. chopped
  • 2 Tbsp. mayonnaise

Directions:

In large bowl combine thawed frozen peas, green pepper, celery, cheese, pimentos, onion, relish and eggs. Gently stir in mayonnaise. Chill.

Servings: 4 - 6
Prep Time: 20 Minutes. Then chill in the fridge
