Peaches and Cream Cake

Easy to make, but tastes scrumptious!

Ingredients:

  • 3/4 cup flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (3 oz.) pkg. vanilla pudding mix (not instant)

  • 3 Tbsp margarine melted
  • 1 egg
  • 1/2 cup milk
  • 1 large (15-20 oz.) can sliced peaches, drained, reserving liquid
  • 1 (8 oz.) pkg. cream cheese (softened)
  • 1/2 cup sugar
  • 3 Tbsp. peach juice (reserved from can)
  • 1 Tbsp. sugar
  • 1/2 tsp. cinnamon

Directions:

Mix flour, baking powder, salt, and dry vanilla pudding. Set aside. Mix melted margarine, egg, and 1/2 cup milk. Mix wet ingredients with dry, beat two minutes.

Pour into a prepared 9 inch deep dish, 11 inch pie, or 9 inch square pan (I used a 10 inch flan pan). Place sliced peaches on top of batter. Combine cream cheese, sugar, and peach juice. Spoon within 1 inch of edge on top of peaches. Mix sugar and cinnamon. Sprinkle on top. (Make sure you keep the cream cheese mixture 1 inch from the side of the dish or it will cook over while baking.)

Oh my goodness, it is baked at 350F. So sorry I forgot that.

So I made this last night. Let me just tell you, I can't stop thinking about it. I'm totally addicted to this cake and I'm not even a huge cake fan.
