Cranberry Orange Relish

This is an easy and delicious side dish I make especially at holiday times but other times too as I buy and freeze cranberries in the fall when they're available. Just put the package as is in the freezer then wash and use when needed. Use a naval orange so there's enough peel; a thin skin like a Temple won't be as good. If the orange is large, the relish won't set well and will be more syrupy because there'll be too much liquid but will still be good.

Ingredients:

  • 1 pkg. cranberries, washed and sorted
  • 2 apples, cut up and unpeeled, red or yellow; yellow for a bit more sweetness
  • 1 medium seedless orange, with peel, stem end(s) sliced off
  • 1-3/4 cups sugar
  • 1 small red Jello, any flavor (wild strawberry is best!)
  • 3/4 cup hot water

Directions:

Dissolve Jello in hot water and let cool while preparing fruits. Cut up and grind fruits together on coarse in food processor or food grinder. Add sugar and mix well. Pour Jello over fruit and mix well. Pour into 1 or 2 containers. Refrigerate at least overnight; 2 days is even better. Use as side dish.

I make this about 4 -5 times during the winter and even sometimes I make it in the summer . It is delicious and if you make it with a few adjustments it can even be called good for you
Instead 1 3/4 c add only 1/4 c sugar and 1/4 c stevia. It will be tart but with the addition of other ingredients it is wonderful.
1 can of crushed pineapple with juice.
1 small box of cherry and orange jello.
2 apples granny Smith and Fuji or other hard sweet apple
2 oranges segmented.
3/4 c boiling water

In summer add black cherries.
