Lemon Loaf

Ingredients

  • 1/2 cup vegetable shortening
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk
  • grated rind of 1 lemon
  • 1/2 cup chopped nuts (opt.)
Glaze:
  • 1/3 cup sugar
  • juice of 1 lemon

Directions

Heat oven to 350 degrees F. Greased 9x5 inch loaf pan. Cream shortening and sugar till light and fluffy. Add eggs, 1 at a time, beating well after each addition. Sift dry ingredients together. Add 1/3 to egg mixture followed by 1/3 of milk; beat well. Repeat twice more. Fold in lemon and rind and nuts. Spoon into loaf pan and bake 45-55 minutes until loaf springs back when lightly touched. Spoon glaze evenly over hot loaf as soon as removed from oven. Cool and remove from pan.

Recipe: Lemon Loaf

Add to creamed mixture alternately with milk, beating well after each addition. Stir in rind. Pour into 5x9 inch loaf pan.

Ingredients

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk
  • grated rind and juice of 1 lemon

Directions

Cream butter and 1 cup sugar together in bowl. Add eggs, beating well. Sift dry ingredients together. Add to creamed mixture alternately with milk, beating well after each addition. Stir in rind. Pour into 5x9 inch loaf pan. Bake at 350 degrees F for 45 minutes. Mix lemon juice with remaining 1/2 cup sugar. Spoon over hot bread. Cool in pan.

If you poke holes with a toothpick (and twirl to enlarge the hole a little bit) , then spoon the sugar lemon mix over the top, it will sink in better. (07/19/2008)
