Baby Marrow and Mushroom Curry
Curry to be served with rice, roti, puri or naan.
- 750g baby marrow (courgettes or zucchini), washed and sliced in cubes
- 250g button mushroom sliced
- 1 medium onion sliced
- 4 medium tomato chopped
- 4 green chilies
- 1 tbsp. masala
- 1/4 tsp. tumeric powder
- 1 Tbsp. brown sugar
- 83 ml sunflower oil
- 2 Tbsp. butter
- 2 cloves
- 2 cinnamon sticks
- 2 cardamom
- 4 cloves garlic chopped
- 1 tsp. cumin seeds
- 1/2 tsp. mustard seeds
- salt to taste
- coriander leaves to garnish
Heat oil and butter in a pan. Fry onion till light brown and green chili, mustard, cumin seeds, cloves, cinnamon and cardamom. Add garlic and stir.
Add turmeric powder and masala, add tomato and cook for few seconds. When the tomato cooks, add the mushroom and baby marrow. Stir in the sugar and salt to your taste. Cook till tender, not mushy. Garnish with coriander leaves (cilantro).
