Asian Inspired Baked Salmon

The baked salmon filets.
This is one of those easy recipes to whip up that doesn't require any time to marinate in the fridge. I went a little heavy on the lemongrass (I absolutely love lemongrass) and fish sauce but it's just so delicious! You can add more or less red peppers depending on your spicy tolerance. This salmon pairs perfectly with rice and side soup!

The baked salmon filets.This is one of those easy recipes to whip up that doesn't require any time to marinate in the fridge. I went a little heavy on the lemongrass (I absolutely love lemongrass) and fish sauce but it's just so delicious! You can add more or less red peppers depending on your spicy tolerance. This salmon pairs perfectly with rice and side soup!

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 6-8 servings

Ingredients:

  • 4 Lemongrass stalks (or 1/3 cup)
  • 5 Garlic cloves
  • 4 Red pepper
  • 3.5 lb Salmon
  • 4 Tbsp Fish sauce
  • Dash of Garlic powder
  • Olive oil (for brushing on foil)

Steps:

  1. Peel lemon grass, cut off the stem and add into food processor to pulse. (You can actually add all of your lemon grass in a food processor and then store in zip loc bags in the freezer for future use.)

  3. Mince garlic and red pepper.
  4. Combine all ingredients into a bowl and mix (except garlic powder)
  5. Marinade for salmon with fish sauce and lemongrass.
     
  6. Line foil and brush with olive oil. Lay salmon and add dash of garlic powder.
  7. Two filets of salmon on a aluminum foil lined tray.
     
  8. Pour and spread lemon grass/garlic/red pepper/fish sauce mixture over salmon.
  9. Salmon filets covered in lemongrass and fish sauce.
     
  10. Bake at 400 degrees F for 20 minutes or until ready.

This looks / sounds absolutely delish, Michelle! Thanks for posting, and I look forward to trying. One quick question, though: when you say 4 red peppers, do you mean bell peppers or those spicy little red bird peppers?
