There are lots of sales on fish for Lent. This is easy and quick. It tastes and smells wonderful. I only made 1/2 pound of salmon. If you combine the Parmesan cheese and bread crumbs in a 1:1 ratio and add the seasonings to taste, it will come out fine. I will write the recipe as written.

Ingredients:

  • 2 lb salmon fillet
  • 2/3 cup plain breadcrumbs
  • 2/3 cup grated parmesan cheese
  • 1/4 cup finely chopped parsley
  • 4 cloves garlic , minced
  • 1/3 cup melted butter (I used oil)
  • salt and pepper
  • lemon wedges

Steps:

  1. Position a rack in the middle of the oven. Preheat oven to 400°F.
  2. Ad

  3. Line a baking tray with a large piece of foil.
  4. Place the salmon fillet, skin side down, on the baking sheet; set aside.
  5. Mix together the breadcrumbs, parmesan cheese, parsley and garlic in a small bowl.
  6. Pour in the butter. I only added enough oil to make a paste that would stick to the fish. Season to taste using salt and pepper.
  7. Ad

  8. Pour the mixture over the salmon, pressing it into the top until the fillet is completely covered.
  9. Bake uncovered for 12-15 minutes until the crust is golden and the salmon is cooked and flakes easily with fork.
  10. Serve with lemon wedges and a squeeze of lemon (I only had lemon juice I had frozen, so I used that).

This is hands down the best recipe I've tried in months!

Ingredients:

Directions:

In small saucepan over medium heat, stir butter with honey and sugar until butter melts. Remove from heat. Add soy sauce, mustard, oil, and garlic; mix well and let cool.

Remove bones from fish. Rinse and pat fish dry with paper towels. Put fish into a greased pan. Spoon sauce over and marinate for one hour. Put the whole pan in the oven and bake for 30 minutes at 350 degrees F.

Time:15 Minutes Preparation Time
30 Minutes Cooking Time

This is a fantastic "set it and forget it" type of dish that results in a super juicy, perfectly cooked salmon. While it cooks, you can prepare the sides and not worry about it drying out.

The main star of my salmon dish is the almond sauce, which is really an homage to Thai and Indonesian inspired peanut sauces. I made this for my dear friend who is allergic to peanuts and it absolutely won him over.

The almond sauce is so creamy and complex that the citrus veggies really cut through. This is a lovely pairing!

This is a super simple recipe that tastes very elegant. Because the walnuts are toasting the whole time the salmon is baking, they're perfectly crisp and go so well with the sweetness of the orange and honey.

In medium bowl, beat together eggs, milk, and soup. Stir in croutons, flaked salmon, green pepper, and onion. Pour into buttered 11x7 baking dish. Sprinkle Parmesan cheese over top.
