Here's a delicious, lightweight dish; perfect for a healthy lunch or dinner.
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Yield: 2 people
- 1.5 lb cod
- 1 orange, sliced
- 2 sprigs rosemary
- dash salt
- dash pepper
- 2 Tbsp sesame oil
- spring salad mix
- red bell pepper, sliced
- Wash and clean fish. Line toaster oven with foil.
- Sprinkle cod a splash sesame oil and a dash of salt and pepper. Top off with sliced orange pieces and rosemary.
- Close the foil and bake at 350 degrees F. for about 25 minutes, or until ready.
- Garnished over bed of spring salad mix and red bell peppers.
