Barbecue Chuck Roast

This is a great way to stretch a roast! I like to serve this over rice, but it's also good by itself.

Ingredients:

  • 3-4 lb. beef roast
  • Advertisement

  • 1 clove garlic or 1/8 tsp. garlic powder
  • 2 Tbsp. water
  • 1 Tbsp. brown sugar
  • 1/2 tsp. pepper
  • 1/2 tsp. ginger
  • 1 Tbsp. cooking oil
  • 2 Tbsp. water
  • 1/4 cup soy sauce

Directions:

Three hours in advance, sprinkle meat with tenderizer on each side of 3 or 4 lbs. of roast. Pierce deeply with fork and leave 1 hour.

Mix all barbecue ingredients in shallow pan or dish large enough to hold meat.

Cut roast into 1 inch cubes. Marinate 1 1/2 hours in barbecue sauce.

  • Drain pieces and place on charcoal about 15 minutes. Brush with sauce to add flavor.

    Servings: 6-8
    Prep Time: 20-25 Minutes
    Cooking Time: 15 Minutes
