How much potato salad and macaroni salad will I need to purchase to serve 75? We are having a community picnic.

1/4 pound per person.
I usually go 1 cup a person, which = roughly 1/2 pound if it is sold in the deli counter by pound like our grocery store does.
So if I am doing the math right, 75 people x 1/2 pound = 37.5 pounds would feed 75 people.
If your group is going to be heavy on men and boys, you may want to get 2 cups (1 pound a person = 75 pounds).
Be sure to have enough ice on hand to keep all of this cool in the serving trays. We use those aluminum pans filled with ice and set colorful plastic bowls in the middle. For our last party (not quite as many as yours) this system worked quite well to keep the salads cold.
Now if you are going to have 3-4 salads (like a regular salad, cole slaw, the potato and the macaroni) you could reduce each purchase by a few pounds.
