Crispy-Edged Chewy Chocolate Chip Oatmeal Cookies

Total Time: 27 plus cooling time

Ingredients:

• 1 cup butter
• 1 cup packed brown sugar
• 1/3 cup white sugar
• 2 eggs
• 2 tsp vanilla extract
• 1 1/4 cup all-purpose flour
• 1/2 tsp baking soda
• 1 tsp salt
• 3 cups quick oats
• 1 cup semi-sweet chocolate chips

Steps:

1. Preheat oven to 325 F. Place butter in a bowl and microwave on high for 30 to 45 seconds, until part of butter is melted and the rest is softened. Cream together the butter, brown sugar, and white sugar until smooth.

 
2. Beat the eggs in one at a time. Stir in vanilla.

3. In another bowl, mix together the flour, baking soda, and salt.

 
4. Pour the dry mixture into the wet mixture. Stir until combined.

 
5. Blend in the oats.

 
6. Stir in the chocolate chips.

 
7. Drop heaping tablespoons of dough onto ungreased baking sheets. Bake for about 12 minutes, until edges are just browned.

8. Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

 
9. Edges will be super crispy, while the centers stay chewy. Delicious!
