Chocolate Chip Oatmeal Cookies on trayMy friends and I were having a discussion about cookies. Everyone agreed oatmeal was better than plain, chocolate chips were better than raisins, but half liked chewy while the other half liked crispy. As this debate was going on, I came up with a cookie combination to make everyone happy. I actually prefer chewy, but when I tried my cookies, I was immediately fond of the crispy edges. What a surprise. Everyone loved these!

If you store these cookies in an airtight container, they will end up all chewy. Leave them out to keep them crispy-edged. :)

Prep Time: 15

Cook Time: 12

Total Time: 27 plus cooling time

Ingredients:

  • 1 cup butter
  • 1 cup packed brown sugar
  • 1/3 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3 cups quick oats
  • 1 cup semi-sweet chocolate chips

Steps:

  1. Preheat oven to 325 F. Place butter in a bowl and microwave on high for 30 to 45 seconds, until part of butter is melted and the rest is softened. Cream together the butter, brown sugar, and white sugar until smooth.

  5. In another bowl, mix together the flour, baking soda, and salt.

  13. Drop heaping tablespoons of dough onto ungreased baking sheets. Bake for about 12 minutes, until edges are just browned.

  15. Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Cream margarine and sugars, beat in eggs. Add vanilla. Beat in flour and oatmeal. Add salt, soda and baking powder. Stir in chocolate chips and grated Hershey bar by hand.
