My friends and I were having a discussion about cookies. Everyone agreed oatmeal was better than plain, chocolate chips were better than raisins, but half liked chewy while the other half liked crispy. As this debate was going on, I came up with a cookie combination to make everyone happy. I actually prefer chewy, but when I tried my cookies, I was immediately fond of the crispy edges. What a surprise. Everyone loved these!

If you store these cookies in an airtight container, they will end up all chewy. Leave them out to keep them crispy-edged. :)

Prep Time: 15

Cook Time: 12

Total Time: 27 plus cooling time

Ingredients:

  • 1 cup butter
  • 1 cup packed brown sugar
  • 1/3 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3 cups quick oats
  • 1 cup semi-sweet chocolate chips

Steps:

  1. Preheat oven to 325 F. Place butter in a bowl and microwave on high for 30 to 45 seconds, until part of butter is melted and the rest is softened. Cream together the butter, brown sugar, and white sugar until smooth.
  2. Beat the eggs in one at a time. Stir in vanilla.
  3. In another bowl, mix together the flour, baking soda, and salt.
  4. Pour the dry mixture into the wet mixture. Stir until combined.
  5. Blend in the oats.
  6. Stir in the chocolate chips.
  7. Drop heaping tablespoons of dough onto ungreased baking sheets. Bake for about 12 minutes, until edges are just browned.
  8. Let cookies cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  9. Edges will be super crispy, while the centers stay chewy. Delicious!

Ma's Oatmeal Chocolate Chip Cookies

I just made oatmeal cookies like these, but I also add Butterscotch pieces with the chocolate pieces ,shredded coconut, a few chopped walnuts, and raisins, also threw a few cranraisins, I use about a little handful each, These are GOOD! I make enough to give away. If not, I will finish them, and that I really don't need. That's about 3 1/2 doz. (12/06/2008)
