Pinto Bean Brownies

Our neighbor has given me so many pinto beans that I needed to put them to good use. I remember having a recipe for pinto bean brownies and had never tried them, so decided to give it a shot. I'm guessing these are a bit healthier than the normal brownie! They are moist and tasty and don't taste like beans at all!

Our neighbor has given me so many pinto beans that I needed to put them to good use. I remember having a recipe for pinto bean brownies and had never tried them, so decided to give it a shot. Prep Time: 20 minutes

Cook Time: 30 to 35 minutes

Total Time: 1 hour

Yield: 9

Ingredients:

  • 1/2 cup whole wheat flour
  • 3/4 cup sugar
  • 3/4 cup unsweetened cocoa
  • 1/3 cup packed dark brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup chocolate chips, divided
  • 1 15 oz. can pinto beans
  • 1/3 cup milk
  • 3 Tbsp oil
  • 1 Tbsp vanilla extract
  • 2 eggs

Steps:

  1. Preheat oven to 350 degrees F and spray a 9 by 9 inch baking pan. In a large bowl, combine flour, sugars, cocoa, baking powder, and salt. Mix thoroughly.
  2. Melt l/2 cup of chocolate chips in a small microwaveable bowl and microwave on medium power for 30 seconds, stirring and cooking at 30 second intervals for 2 minutes until melted and smooth. In a blender, combine beans, milk, oil, vanilla, and eggs. Add to flour/sugar mixture. Add melted chocolate. Mix until smooth. Gently stir in l/4 cup chocolate chips.
  3. Pour batter into baking pan and bake for 30 to 35 minutes until brownies are firm.
