Pork Cauliflower Orzo Soup

It has been gloomy and cold lately in Southern California so that calls out for soup! Very little ingredients to make this soup however, the time consuming part was simmering the pork shoulder for a few hours, other than that this is easy to whip up and kid approved!

Time varies depending on pork - best to get accurate time is to use a thermometer and have it beep when internal temperature is 145 degrees.

Prep Time: 5 minutes

Cook Time: 2-3 hours

Total Time: 2-3 hours

Yield: Used some for soup, and some of the meat for a different meal

Ingredients:

Steps:

  1. Bring to a boil, then reduce to a simmer for 2-3 hours until pork reaches 145F internal temperate.
  2. You can slice the pork shoulder into slices when ready.
  3. Meanwhile follow the instructions to prepare your orzo.
  4. Optional - bake some cauliflower at 450F for 15-20 minutes.
  5. Combine all the ingredients in bowl. Pour in some of the pork broth and you'll have yourself a hearty soup!
