Easy to make, cake mix based muffins.
Total Time: one hour
Yield: 18 muffins
Ingredients:
- 1 15 oz can of pumpkin puree
- 1 3.9 oz unsweetened snack cup of applesauce
- 1 15.25 oz box of yellow cake mix
- 3 large eggs
- 1 cup raisins
- 6 Tbsp cinnamon
- 1 tsp baking soda
Steps:
- Preheat oven to 375 degrees F.
- Line muffin tins with paper liners and spray with cooking spray.
- Mix all the listed ingredients in a large mixing bowl until combined. Batter should be orange with no white lumps.
- Fill paper liners in muffin tins with batter, half full.
- Place filled muffin tins in preheated oven and bake for 20 minutes or until fork comes out clean.
