Veggie Tuna Melt

This is one of my favourite versions of a tuna melt because it has added veggies and Greek yogurt. Choose any type of cheese you like, I went with a slice of Muenster!

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 1 sandwich

Ingredients:

Steps:

  1. In a bowl, mix together the tuna, onions, lettuce, and parsley. Squeeze lemon juice on top, sprinkle with a bit of salt and pepper. Mix well.
  2. Add yogurt, mayonnaise, and mustard. Stir well.
  3. Allow mixture to sit for a few minutes for flavours to come out. Tip out any juices from the bowl.
  4. Butter the slices of bread on one side each.
  5. Place one slice, butter side down, on a lightly greased nonstick pan over medium heat.
  6. Spoon the tuna mixture onto the bread.
  7. Place avocado and tomato slices on top.
  8. Add the slice of cheese, then top with the other slice of bread, buttered side up.
  9. When the bottom slice is golden brown (a total of a couple minutes), flip over and cook until the other slice is browned.
  10. Serve with lettuce and/or pickles.
