Gelatin Cucumber Salad

This salad is really different. Interesting mix of the fruity flavored gelatin along with the vegetables.

Ingredients:

  • 1 (3 oz.) pkg. lime gelatin
  • Ad

  • 1/2 cup mayonnaise
  • 1 Tbsp. sweet pickle, chopped
  • salt
  • 1 carton cottage cheese
  • 1 cup boiling water
  • 1 Tbsp. grated carrots
  • 1 Tbsp. grated cucumber
  • dash onion juice

Directions:

Mix gelatin and hot water. Let cool. When thickened, beat until light and add mayonnaise. Fold in carrots, pickle, and cucumber. Add dash of salt and onion juice. Add cottage cheese and refrigerate at least 2 hour.

Servings: 8
Prep Time: 10-15 Minutes

The amount of carrots and cucumber does not seem like enough.

A very interesting recipe. I've not had one that I could freeze, so this
is a first for me, and I'm looking forward to trying it Keeper.
