My grandmother, who came here from Italy, used to add a whole carrot to the sauce as it cooked and then remove it before serving.

I use chopped or grated carrot in my spaghetti sauce all the time. It does make it sweeter as well as adding a bit more veggies to the meal.

I just use alittle brown sugar or white sugar. Just about 1 teaspoon will usually do the trick.
