Oriental Cucumber Salad

Ingredients:

  • 1 large English cucumber, peeled and sliced as close to paper thin as possible
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1 Tbsp. soy sauce
  • Ad

  • 1/4 cup rice wine vinegar
  • 1 tsp. sesame oil, not dark
  • 2 tsp. sesame seeds, toasted

Directions:

Sprinkle cucumbers with salt in a bowl and toss. Add sugar, soy sauce, rice wine vinegar, sesame oil, and toss. Sprinkle with sesame seeds, toss, marinate for 20 minutes and serve.
