Fiesta Breakfast Casserole


  • 1 lb. sausage, crumbled
  • 1/2 lb. bacon, cut up
  • 1 lb ham, cut in bite-size pieces
  • 6 eggs
  • 16 oz. sour cream
  • 1 tsp. dry mustard
  • Ad

  • 1/2 tsp. salt
  • cayenne pepper, to taste
  • 4 oz. can green chilies, cut up
  • 10-12 oz. sharp cheddar cheese, shredded
  • 9 slices white bread


Choose one of the 3 meats. Brown meat and drain, if needed. Butter one side of each slice of bread. Lay buttered-side down in a 9x13 inch baking dish. Cut each slice into quarters. Top with meat; next sprinkle cheese and green chilies. Beat eggs, sour cream and spices together. Pour over top. Refrigerate overnight. Bake, uncovered, at 350 for 45 minutes to 1 hour or until slightly browned or when inserted knife comes out clean. Note: This recipe says to choose only one of the 3 meats, but you can add a bit of each, if you so desire. Also, the meat choices may be substituted for fresh veggies like broccoli, tomato and green pepper.
