Ingredients:

  • 1 cup flour
  • 1 cup sugar
  • 1 cup oatmeal
  • 1/2 tsp. salt
  • 1 egg
  • 1 tsp. soda
  • 1 can fruit cocktail with juice
  • 1/2-3/4 cup brown sugar

Directions:

Mix with spoon. Bake in buttered 8x8 inch baking dish. Sprinkle with brown sugar. May sprinkle nuts over brown sugar. Bake at 350 degrees F for 25 minutes.

Such a very moist and delicious cake, served warm or cold. Always room for another slice. By far, one of my favorites!

Ingredients:

  • 2 cups unsifted flour
  • Advertisement

  • 1 1/2 cups sugar
  • 2 scant tsp. soda
  • pinch of salt
  • 2 eggs, beaten
  • 1 (1 lb.) can fruit cocktail
  • 1 tsp. vanilla
Icing:
  • 1 stick butter
  • 1/2 cup evaporated milk
  • 1 cup sugar
  • 1 cup coconut
  • 1 tsp. vanilla
  • 1 cup chopped pecans or walnuts

Directions:

Sift together flour, sugar, soda, and salt. Add remaining ingredients. Beat well. Bake in greased and floured 13 x 9 x 2 inch pan at 300 degrees F for 50 minutes. While cake is hot, pour icing over it. This cake freezes well. If cake batter looks thin, add a little more flour. Some fruit cocktail has more juice than others. Ice with Fruit Cocktail Cake Icing. (below)

Icing: Cook the ingredients together. Pour over cake as soon as you take it out of oven.

Ingredients and Directions

Sift together:

1 cup sugar, 1 cup flour, 1 teaspoon baking soda, 1/4 tsp. salt.

Add and mix well

1 tsp. vanilla, 1 egg, 1/2 cup chopped nuts, 1 cup fruit cocktail.

Pour into well greased pan and cover with 1/2 cup, packed brown sugar.

Bake at 275 degrees F for 25-35 minutes

Ingredients

  • 2 eggs, beaten
  • 1 1/2 cups white sugar
  • 1 cup oil
  • 1 can fruit Cocktail
  • 2 cups flour
  • 1/2 tsp. salt
  • 2 tsp. soda

Directions

Beat eggs until light; beat in sugar. Add some oil to egg mixture; then alternate with dry ingredients. Last fold in fruit, juice and all. May sprinkle 1/3 cup coconut on top after batter is in pan, if desired. Bake at 350 degrees F. for 35-40 minutes. A delicious moist cake!
