Tortilla pizzas are a lower calorie alternative to traditional pizza. They are quick to make and can be topped with all of your favorite toppings.
Begin with a flour tortilla. Place it on a plate that is microwave safe. Spread a layer of pizza sauce on the tortilla, covering to the edge. Add topping of your choice. Top off with a little shredded cheese. Pop into the microwave for a minute or two, just long enough to melt the cheese. Remove and cut into 6 or 8 wedges and enjoy.
Note: I brown sausage and hamburger and crumble it just for these mini-pizzas.. Freeze on a cookie sheet and then transfer to a zip lock bag.
