Freezer Breakfast Burritos

Here is a great recipe to make in bulk and keep in your freezer. This recipe makes 24 breakfast burritos that you can freeze and use as a quick and easy breakfast.

Ingredients:

  • 12 to 16 eggs, beaten
  • 1 lb ground sausage, cooked (or crumbled links)
  • 1/2 cup chunky salsa
  • 2 cups cheddar cheese, shredded
  • 24 large flour tortillas

Extras:

These ingredients are optional.

  • 1 green pepper, finely diced
  • 6 potatoes, shredded and fried
  • jalapeno, sliced or diced
  • 1 can chopped green chilies
  • 1-2 clove garlic, finely minced
  • 1 onion, finely diced
  • 1 tomato, peeled and chopped
  • 2 green onions, sliced with tops

Directions:

Scramble eggs in large skillet until cooked. Stir in cooked sausage. Add any of the extras you choose. Save the salsa and shredded cheese.

Wrap the Tortillas in a damp paper towel and warm in the microwave until they are warm (about 1 minute).

Place 1/2 cup of scrambled egg mixture into a tortilla. Then add a little of the shredded cheese and a spoonful of the salsa. Then roll burrito-style.

To Freeze:

Wrap each burrito in foil and freeze in single layer on a cookie sheet. When fully frozen transfer wrapped burritos to large zip-top freezer bags and freeze.

To Serve:

Remove foil and wrap in a paper towel. Cook for about 2 minutes in the microwave. Cook times may vary depending on how much power your microwave has.

Tasty Breakfast Burritos

Ingredients:

  • 1 lb. ground beef
  • 3-4 potatoes cubed very small
  • 1/2 cup onions chopped very small
  • flour tortillas
  • salt and pepper to taste

Directions:

Brown meat with onions; drain.

Add potatoes, cover cook till potatoes tender/done.

Place on warm flour tortillas roll up tight burrito style; fold short ends first then fold long ends.

I place them in large freezer baggie and heat as needed in microwave. Good for breakfast with salsa and also a quick dinner.

Freeze Breakfast Burritos

I make breakfast burritos and freeze them. Then if we are running late all I have to do is microwave them and walk out the door!

They are simple to make. I place cooked scrambled eggs with added chopped peppers and onions in a tortilla shell, roll up, wrap and place in the freezer!

Breakfast Burrito

Ingredients

  • Simply potatoes (Southwestern style, if you want a bit of spice - available in the dairy section near the eggs)
  • eggs (beat well with a little milk or water)
  • salsa
  • shredded cheese
  • soft taco shells

Directions

Take taco shells out of fridge and bring to room temperature. Fry potatoes according to directions. Turn heat down to medium. Pour in eggs and scramble with the potatoes. Add some salsa and shredded cheese to taste. Spoon into middle of taco shells, fold sides in a little and gently roll like a burrito.

Thrifty Breakfast Burritos

Better and thriftier than fast food chains!

Ingredients:

  • 1 lb sausage
  • 1 dozen eggs
  • 1 dozen flour tortillas (soft taco size)
  • 2 cups shredded cheese (we use cojack or a Mexican cheese blend)
  • 1 cup salsa

Directions:

Brown sausage in skillet. Drain off fat. Lightly beat eggs & scramble with sausage in skillet. Set aside. Warm tortillas in microwave. Place about 1/3 cup of egg/sausage mixture on to 1 tortilla. Sprinkle with some cheese & add 1 teaspoon of salsa. Roll up burrito style. Place burritos on a cookie sheet & flash freeze for about 30 minutes. Wrap each burrito in plastic wrap & place wrapped burrito in a large ziploc bag. Freeze.

To serve: unwrap burrito & microwave for approximately 2 minutes.

Build Your Own Breakfast Burritos

Use your imagination for ingredients and the sky is the limit for use of any possible leftovers (or use of yesterday's leftovers). It's especially fun when preparing for company because everyone can choose their own fillings. Of course, they're fun and yummy for lunch or dinner, too.

Here is a list of my favorite ingredients which changes depending on the mood of the day and/or what's in the fridge or pantry.

Ingredients

  • Flour tortillas, size of your choice
  • Hash browns, shredded and kept warm
  • Scrambled eggs, kept warm
  • Refried beans, kept warm
  • Tomatoes, diced
  • Cheddar cheese, shredded
  • Ham, diced
  • Green chilies, diced
  • Bell peppers, diced
  • Sour cream
  • Salsa

Directions

Heat the tortillas in microwave for 10 seconds so they will separate easily.

Evenly spread/place ingredients of choice along the center of each tortilla.

Slightly fold over opposite ends of tortilla and then wrap the other two sides over one another. If the final fold pops up, a bit of water spread between the final folds usually helps or use a toothpick.

Now is where you choose to eat "as is" or if you want to heat for a short time in the microwave, heat in a slightly oiled skillet or heat on a grill. Each choice gives a subtle flavor change and is fun to experiment with. :-)

Sausage Breakfast Burritos

Ingredients

  • 1 lb. sausage, mild
  • 1 can green chilies, chopped
  • 2 cups cheddar cheese, shredded
  • 8 eggs
  • 3/4 cups milk
  • 1 package flour tortilla shells
  • 1 jar salsa

Directions

Brown the sausage and chilies together and drain. Cook the eggs mixed with milk scrambled. Place a small amount of cheese and about 1/8 of the ground sausage and 1/8th of the egg down the center of a tortilla. Roll up the tortilla and place, seam side down, in an 8x10 inch pan. Do this until the sausage and eggs gone, it makes 8 or 9 tortillas. Refrigerate overnight.

Bake, covered, at 350 degrees F for 45 minutes. Remove the cover and sprinkle additional cheese on top and bake uncovered for 15 minutes. Serve with a side of salsa.

Ground beef fry it in pan along with potatoes, cut up into tiny squares you can add cheese if you like or salsa. This is very good anytime.
