This yummy recipe definitely isn't for the diet-conscious! Paula Dean would be so proud.

Ingredients:

  • 2 lbs. frozen hash browns, thawed or 6 potatoes, peeled, boiled, and diced

  • 2 sticks butter or margarine (1 cup)
  • 1 pint sour cream
  • 2 cups grated cheddar cheese (I prefer sharp)
  • 1/2 cup onion, finely chopped
  • 1 can cream of chicken soup
  • salt and pepper, to taste (I usually leave out the salt since soup, cheese, and butter each contain plenty of salt).
  • 2 cups cornflake crumbs

Directions:

Place potatoes in 9x13 inch baking pan. Melt one stick butter and pour over potatoes. Mix together sour cream, cheese, soup, onion, salt, and pepper. Pour over potatoes.

Crush enough cornflakes to yield 2 cups crumbs and mix with one stick melted butter. Pour crumbs over second layer of cheese, soup, onion, and seasonings. Bake one hour in 350 degree F oven. Freezes well.

Servings: 12 to 15
Prep Time: 10-15 Minutes
Cooking Time: 1 Hours

This is an awesome recipe to take to a pot luck or to go with your main meal. We love it with meatloaf and my kids REALLY love it.

Layer the frozen hash browns in a 9x13 inch pan.

Put all the other ingredients in a sauce pan and mix together until melted. The mixture will be really thick. When it is melted and smooth, pour the cheesy mixture over the potatoes.

Bake for 1 hour at 350 degrees F.

I sometimes stir it half way through and then let it get brown on the top.

ENJOY! It is a great recipe. My kids are really finicky and they eat it up!

When doubled, thaw the hash browns for 30 minutes and cook the same way.

Servings: depends on the size you scoop out.

60 Minutes Cooking Time

I am a lover of the Hashbrown Casserole served at the Cracker Barrel restaurants. I live in Canada, however, make sure we get to have meals at the Cracker Barrel's each time we travel to the USA. I have one recipe that is frozen hash browns, sour cream, cheese, a can of creamed soup, but this does not taste anything like the real thing. If I can push a bit further? How about their Buttermilk Biscuits, they aren't popular at all here in Canada, not sure why since they taste divine! Any help? Thanks!

Cracker Barrel Hash Brown Casserole

Ingredients

Directions

Preheat oven to 425 degrees F. Combine the frozen hash browns, cheese, and onions in a large bowl. Combine the milk, beef stock, half the melted butter, the garlic powder, salt and black pepper in another bowl. Mix until well blended, then pour the mixture over the hash browns and mix well.

Heat the remaining butter in a large,ovenproof skillet over high heat. When skillet is hot, spoon in the hash brown mixture. Cook the hash browns, stirring occasionally, until hot and all of the cheese has melted (about 7 minutes). Put the skillet into the oven and bake for 45-60 minutes or until the surface of the hash browns is dark brown.

Note. You can also use a 9x9 inch baking dish.

Quick and easy.

Shred cheese and mix all ingredients together in baking dish. Cook 45 minutes at 350 degrees F.

Mix all ingredients thoroughly. Pour into greased casserole. Crumble cornflakes on top. Bake at 375 degrees F for 1 hour.

Very good leftovers to heat in the microwave. This could be started earlier in the day, and refrigerated. You could even bake the crust ahead, then just pour in the ingredients and bake as directed.

I am making hash brown casserole for 120 people. Is there anyway I could put it in a roaster to cook it or would it turn out mushy from the steam?

It will turn out mushy! I tried that once thinking I would save time and had to throw the whole thing out. Unfortunately, hash browns need to be fried. That's what makes them brown.

Ingredients

  • 1 package southern-style frozen hash brown potatoes, thawed
  • 2 cup shredded cheddar cheese
  • 1 can condensed cheddar cheese soup
  • 1 cup sour cream
  • 3/4 cup sliced green onions

Directions

Preheat oven to 375 degrees F. In large bowl, combine all ingredients. Spread mixture in greased 9x13 inch pan. Bake 50-60 minutes or until lightly browned and bubbly. 10-12 servings.

Ingredients

  • 1 can cream of celery soup
  • 3/4 cup sour cream
  • 1/2 cup onion, chopped
  • 1/2 cup chives, chopped
  • 1/2 cup butter, melted
  • 1 pkg. hash browns potatoes
  • 2 cups cheddar cheese, shredded
  • 4 cups corn flakes

Directions

In a large bowl, mix the soup, sour cream, onion, chives, and 1/4 cup of the melted butter. Fold in the hash browns and shredded cheese. Crush the corn flakes in a zip lock bag. Add 1/4 cup of the melted butter to the crushed corn flakes and mix thoroughly. Spray a 9x13 inch pan with non-stick cooking spray and put the hash browns in it. Cover the hash browns with the crushed corn flakes mixture. Bake at 375 degrees F for 45 minutes or until lightly brown on top.

Adding 1 1/2 cups cubed leftover ham changes this from a side dish to a main dish casserole.

In fact, I came across the recipe with the ham in it before I knew it was a popular side dish without it. (05/12/2009)

Ingredients

  • 2 lb. frozen hash browns
  • 1/2 cups butter, melted
  • 1 Tbsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup onion, chopped, opt.
  • 1 carton sour cream, (standard size)
  • 1 can cream of mushroom soup
  • 2 cups grated cheddar cheese
  • 2 cups crushed corn flakes

Directions

Let hash browns thaw for 1/2 hour. Mix 1/4 cup butter with sour cream, soup and cheese. Put potatoes in 9x13 inch pan, and pour mixture over potatoes. Mix remaining butter with corn flakes and spread over top. Bake at 350 degrees F for 45-50 minutes.

Ingredients

  • 1 bag frozen hash browns
  • 2 cans cream of mushroom soup
  • 2 cartons sour cream
  • 1 onion (chopped)
  • salt and pepper
  • 2 cup cheddar cheese (shredded)

Directions

Mix ingredients together and pour into buttered 9x13 inch pan. Bake at 350 degrees F for 1 hour. Sprinkle with cheddar cheese, then bake another 15 minutes.

Ingredients

  • 1 bag frozen hash browns (thawed)
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded Velveeta
  • 1/2 cup melted margarine
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

Mix together and put in a sprayed 9x13 inch pan. Top with dried onion rings. Bake at 350 degrees F for 1 hour.

Ingredients

  • 1 package Hashbrowns (32 oz size)
  • 1 can Cream of Mushroom soup
  • 1/2 cup Margarine
  • 1 can Cheddar Cheese soup
  • 1 cup Sour cream

Directions

Put hashbrowns in crock pot. Mix soups and sour cream together. Pour over hash browns. Cut up margarine and stir into hashbrowns.

Cook on low for 4 to 6 hours, stirring occasionally.

Note: This time, I added almost a full bottle of real bacon bits. I like it with and without. For the hashbrowns, I used shredded first time and southern this time, both good. I used a small can of Cream of Chicken soup instead of the Mushroom soup. Everyone loved this and wanted the recipe.
