Baked Egg Recipes

You can additionally top each tomato with a sprinkling of grated or finely shredded cheese before baking. Yum!


  • 4 medium tomatoes, tops sliced off, seeds and juice removed

  • extra virgin olive oil to taste
  • salt and pepper to taste
  • 4 jumbo eggs
  • choice of dried herb to taste


Preheat oven to 400 degrees F. Place tomatoes bottom side down in a greased baking dish, drizzle with oil and sprinkle with salt and pepper. Crack one egg into each tomato. Drizzle again with more oil, sprinkle with more salt and pepper and then sprinkle each with your favorite herb.

Bake until tomatoes are softened and eggs are cooked to your satisfaction, about 15 to 20 minutes.

You will need two ramekins or other similar sized oven proof bowls and a baking sheet for this recipe. I've made these eggs with sharp cheddar, pepper jack and parmesan and all three ways were yummy. The next time I make these I am trying crumbled feta cheese.

Preheat oven to 350 degrees F. Put bread in bottom of 9x13 inch pan. Sprinkle with meat and cheese. Beat eggs, 2 cups milk, mustard and slat until fluffy and pour over meat and bread.

Recipe for Baked Egg Omelette. Grease bottom of 9x13 inch cake pan and line with cheese slices. Add your choice of meat. Beat remaining ingredients with egg beater. Pour on top of meat and cheese. Bake at 350 degrees F for 30-45 minutes or until set.

Place bread crumbs in a buttered 9x13 inch baking pan. Top with grated cheese. Beat eggs. Mix with salt, mustard and milk. Pour over bread and cheese.
