This is one of my favorite omelette recipes. Great for breakfast or any time!

Total Time: 1 hour, 10 minutes

Yield: 6 servings


  • 1/4-1/2 lb Velveeta cheese, cubed ($1.50-$2.00)
  • 1/2 cup chopped green pepper ($.50)
  • 1 cup cubed ham or sausage ($1.00)
  • 1/4 chopped onion
  • 4 beaten eggs ($.50-.75)
  • 1/4 tsp salt
  • 1 cup milk
  • 12 crushed crackers ($.35)


  1. Mix all ingredients together and pour into 8x8 pan.
  2. Bake at 350 degrees F for 45 minutes.
  3. You can mix this the night before and put in the refrigerator, then bake 1 hour.

  • 2 Tbsp. margarine
  • 1 medium onion, sliced thin
  • 1 clove garlic, minced
  • 1 lb. zucchini, coarsely grated
  • 1/4 tsp. pepper
  • 2 eggs
  • 1/2 cup milk
  • 3 Tbsp. flour
  • 1/2 cup Parmesan cheese, grated


Saute' the onion, garlic and zucchini in the margarine. Add pepper, then put mixture in greased baking dish. Combine eggs, milk, flour and cheese and pour over squash. Bake at 350 degrees F for 25-30 minutes or until firm.

  • 3 eggs
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup diced fully cooked ham
  • 3/4 cup shredded Monterey Jack cheese, divided
  • 2 bacon strips, cook and crumbled


In a small bowl, whisk the eggs, milk, flour, salt and pepper. Pour into an 8-inch square baking dish coated with cooking spray. Bake, uncovered, at 450 degrees F. for 7 to 9 minutes or until eggs are set. Sprinkle with ham and 1/2 cup cheese. Bake 3 to 5 minutes longer, or until cheese is melted.

Loosen edges of omelet from baking dish with a knife. Using two small spatulas, carefully roll up tightly, jelly roll style, leaving it in the dish. Sprinkle bacon and remaining cheese over omelet roll. Bake for 3 to 4 minutes or until cheese is melted.

  • 3 Tbsp. flour
  • 1/4 tsp baking powder
  • dash salt
  • 2 egg whites
  • 3 Tbsp. sugar
  • 3 Tbsp. milk
  • 2 egg yolks, beatened
  • 1 Tbsp. lemon juice
  • 1 large concord apple unpeeled, thinly sliced
  • 1/4 cup sugar
  • 1/4 tsp. cinnamon


Preheat oven 375 degrees F. Sift flour, baking powder, and salt. With electric mixer, beat egg whites until foamy. Add 3 Tbsp. sugar, continue beating until stiff. In small. bowl, place flour mix, adding milk and egg yolks. Beating until smooth. With rubber scraper, gently mix in froth and lemon juice. Heat pan with butter, pour all of mix into a large pan, spread around. Remove from heat, place apples on top sprinkled with sugar and cinnamon. Bake in oven for 10 minutes.
