I love this Oriental style dish. You can use green peppers only, if you wish, but I like to use one green and one red. Red peppers are sweeter than green.


  • 1 1/2 lbs. round steak cut in thin strips
  • 2 Tbsp. oil
  • 1 cup sliced onions
  • 1 clove garlic
  • 1 cup uncooked rice
  • 1 can beef broth
  • 1 can water
  • 3 Tbsp. soy sauce
  • 2 green peppers, chopped (or other colored peppers)
  • 1 jar pimento, drained


Brown beef in oil; stir in onion, rice, broth, water, and soy sauce. Bring to a boil. Reduce heat; cover and cook until liquid is absorbed, about 25 minutes. Stir in pepper and pimento and heat through.

Servings: 4-6
Prep Time: 20 Minutes
Cooking Time: 25 Minutes

  • 1 lb. ground beef
  • 1 large onion, chopped
  • 1 can kidney beans, drained
  • 1 (13 oz.) can chicken broth
  • 1 pkg. taco seasoning mix

  • 1 1/2 cup Minute Rice
  • 1/2 cup sour cream
  • 8 flour tortillas, steamed


Brown beef and onion in large skillet, for about 5 minutes. Add beans, broth, and taco mix. Bring to a full boil. Reduce heat, and simmer 5 minutes. Stir in rice. Cover, and remove from heat. Let stand 5 minutes. Stir in sour cream. Serve with tortillas. 4 servings.

  • 1 lb. ground beef
  • 1 can tomato soup
  • 1/2 cup salsa
  • 1/2 cup water
  • 6 flour tortillas, cut in 1 inch pieces
  • 1/2 - 1 cup shredded cheddar cheese


Cook beef in skillet until well browned, stirring to break up meat. Stir in soup, salsa, water and tortillas. Heat to a boil. Reduce heat to low and cook for 5 minutes. Stir. Top with cheese. Makes 4 servings.

Lightly brown meat in margarine in large skillet. Season with 1 teaspoon salt and the pepper. Meanwhile, thinly slice onion and green pepper; add to skillet.

Combine chopped onion with hamburger and brow in a deep fry pan and then drain. Return hamburger to fry pan and add cooked macaroni, stewed tomatoes, juice and garlic. Cover and let simmer 15 minutes.

Pat 3/4 of ground beef in bottom of cold electric skillet. Brown the remaining 1/4 ground beef and set aside.


Layer vegetables over meat in skillet. Cover with soup spreading soup to edges of skillet.

Saute beef, onions, green pepper, and garlic. Add remaining ingredients. Cover and simmer 10-15 minutes.

In 12 inch skillet, over medium high heat, cook ground beef and onion until meat is browned, about 10 minutes, stirring frequently. Stir in tomatoes with their liquid and remaining ingredients. . .

Cook pasta according to package directions. Drain well. Brown beef and onion in large skillet while pasta is cooking; drain. Add beans and tomatoes.

Using the covenience of pre-cooked rice or pasta, make a very quick one pot or a skillet meal in just minutes.


Season to suit your family's tastes. I use garlic, salt and pepper that I premix and keep close at hand.

*I always keep a container of cooked rice in the refrigerator, and a freezer bag of cooked pasta in the fridge for the quickest meals possible)

This recipe would work well using leftover chicken instead of the ground beef.


Stir fry the meat until it begins to brown nicely so that it develops a caramelized flavor. If using ground chuck, pour off all the beef grease and replace it with a Tbsp. of olive oil. The lean ground beef probably won't have any grease accumulating, so add a Tbsp. of olive oil to the pan along with the chopped onions. Allow them to cook together until onions are clear.


Add the canned tomatoes and the undrained can of beans. Stir over a medium heat until mixture is hot, and then add the cooked rice. Stir and heat thoroughly. Serve with bread and butter and a green salad.

If you tear up greens and wash them well, then keep them stored in the fridge along with a paper towel, they will stay nice for a few days. You will only have to put what you want into bowls and add the salad dressing. You can add chopped celery or carrot pennies (cooked or raw is fine) and maybe a few cherry tomatoes to make a great salad.

This is a good homemade salad dressing to keep in a jar in the fridge too. I like being able to control what goes into our foods, without the use of so many unpronounceable additives and preservatives.

Apple Cider Vinaigrette

Put everything in a quart jar with a good lid and shake, shake, shake. Feel free to add a cup of sour cream or plain yogurt to this. You will probably need a larger jar.
