This crockpot recipe for chili verde con carne is easy to make and so delicious.

  • 1 lb. pork roast or chopped cubed into small pieces
  • 10 1/2 oz. chicken broth
  • 1 onion, finely chopped
  • 1/4-1/2 tsp. garlic powder
  • 1 can green chilies, diced
  • 1/4 jalapeno, finely chopped
  • 1 tsp. salt
  • 2 Tbsp. flour, dissolved in water
  • white flour tortillas
  • Toppings such as cheddar cheese, grated lettuce, shredded tomato and sour cream


Simmer pork in broth on low for 10 minutes. Add all other ingredients except flour and simmer 45 minutes. Thicken with flour so it is like a thick soup. Spoon about 1/4 cup into the center of a flour tortilla. Roll up tortilla and top with more green chile. Sprinkle with cheese, lettuce and tomato. Top with sour cream if desired. This green chile freezes really well.

  • 1 Tbsp. butter
  • 2 lbs. pork stew meat
  • 2 large onions
  • 1 Tbsp. garlic, minced
  • 2 cans chicken broth (14oz. size)
  • 1 Tbsp. cumin
  • 1 tsp. celery salt
  • 1 tsp. oregano
  • 1/2 tsp. pepper
  • 4 cans green chilies, chopped
  • 1 can Italian style tomatoes, diced
  • 4 Tbsp. butter
  • 4 Tbsp. flour
Saute' the pork, onions and garlic together in butter. Add the chicken broth, cumin, celery salt, pepper, and green chilies. Place everything in a crockpot and simmer on low for 6-8 hours.

Add the tomatoes and roux about 1 hour before serving.

For the roux: In a small saucepan, on medium heat, melt the butter and whisk in 1 Tbsp. of the flour at a time. Cook for about 4-5 minutes, whisking constantly, until the roux can form a ball. Immediately whisk the roux into the stew. (This will thicken the stew).

First of all this recipe does not have to be followed to the letter but should be done to taste, just don't screw it up.

Easy Chili Verde

4 lbs. lean pork roast (boneless)
2 jars green chili salsa


1 cup water

Cut roast into one inch pieces, brown lightly drain off grease. Put into pre-heated crock pot along with the salsa and water. Cook on high until meat is fork tender.
Pour over cooked rise or egg noodles. Makes great tacos and burritos.

Put this on before you go to work, dinner will be ready when you return home. Good luck.
