Herb Roasted Brussels Sprouts, Sweet Potatoes and Carrots

Total Time: 45 minutes



  1. Preheat your oven to 400 degrees F. Wash and cut all the vegetables. You can cut the vegetables how you like. The smaller the size, the faster they cook though!
  2. In a large mixing bowl, add all the cut ingredients in and the spices and lastly drizzle the olive oil in. Toss well and ensure oil is nicely layered on the vegetables.
  3. Spread vegetables evenly on baking sheet and bake for 30 minutes or until ready.

Egg whites work nicely in lieu of oil. Another option would be to soak all the prepared vegetables in enough water to cover, in the refrigerator, for an hour or two. Drain well, add spices / herbs, toss as one would a salad, and bake. Not only do the seasonings adhere well to the damp veg, but the cold water immersion helps plump up the sweet potatoes and carrots.
