A clear gelatin made from cranberry juiceThis is great for the upcoming holidays!

Ingredients:

  • 1 lg. pkg. cherry gelatin
  • 2 cup hot water
  • 1 cup orange juice
  • 1 cup whole cranberry sauce
  • Advertisement

  • 1 cup nuts
  • 1 pkg. Dream Whip, whipped
  • 1/2 can crushed pineapple

Directions:

Dissolve gelatin in hot water; add orange juice. When partially set, add cranberry sauce, nuts, whipped cream, and pineapple. Chill until set.

Servings: 6-8
Prep Time: 15-20 Minutes
Cooking Time: 0 Minutes

This cranberry salad is a family tradition. No holiday would be complete without it. It's a perfect blend of sweet and tart. My eight year old has made the cranberry salad all by himself for the last couple years, and is so proud to contribute to the holiday feast.

Cook cranberry sauce and gelatin to a slow boil. Remove from heat and add pineapple, cherries, and nuts. When cooled slightly, pour into medium size serving dish and refrigerate until set.

Ocean Spray had a recipe on its can for a salad that I have lost. It called for Ocean Spray whole cranberry sauce, jello, pineapple, and nuts. I'm not sure what else, but it seems like an apple and oddly carrots. I remember that the pineapple was put in after the jello had set to almost firm (I think). Can anyone help?

I went to Ocean Spray's recipe site and this one sounds like it just might be the one you're explaining. I'll venture to bet they switched the carrots you mentioned for celery. I hope it's what you're looking for, let me know if it is, okay? :-)

Molded Cranberry Fruit Salad

1 8-ounce can crushed pineapple, drained, reserving juice
1/2 cup Ocean Spray® Cranberry Juice Cocktail
2 tablespoons lemon juice
1 3-ounce package raspberry flavored gelatin
1 14-ounce can Ocean Spray® Whole Berry Cranberry Sauce
1/2 cup chopped celery

Combine reserved pineapple juice, cranberry juice cocktail and lemon juice in a medium saucepan. Bring to a boil. Remove from heat. Add gelatin, stirring until it is completely dissolved. Break up cranberry sauce with a fork. Stir into gelatin mixture.

Refrigerate until mixture begins to set. Stir in pineapple and celery. Pour into a 4-cup mold. Chill until firm. Makes 8 servings.

On the food network site, they had videos with Paula Dean and her favorite Thanksgiving recipes and she made a cranberry salad on there just like what you are looking for. Look there and Good Luck!

I had a recipe from an Ocean Spray cranberry sauce can that called for crushed pineapple, a can of Ocean Spray whole cranberry sauce, nuts, and jello. It seems the jello was made as directed on the box. It did not have any cocktail or other kind of juice added except the drained juice from the pineapple and water. This is all I can remember.
