Tea in a white teacup.My parents worked in the tea industry way before I was around, so I trust them more than any other source when it comes to making great tea. My father is of Persian descent, my mother of Japanese, and we come from England. These regions are all culturally very heavily tea-based, so my tips here will cover more than just black tea.

The Teapot

For loose leaf tea, it's the best to have a round teapot for brewing the leaves. Having this shape allows the loose leaves to dance around when the water is added. Before brewing, add boiling water to the pot and swirl it around to keep its temperature up.

The Water Temperature

Not all sorts of tea need the same temperature of water for optimal flavours. White and green teas should be steeped in lower temperatures, not boiling: about 155 F to 180 F. Oolong can stand a bit more heat, while black teas should have water fresh off the boil at about 200 F to 210 F.

Rinse the Tea

Rinsing tea for 5 seconds in water helps in a couple ways. It quickly removes any impurities, and it awakes the tea leaves for optimal flavour.

Tea Bag Steeping

Although I much prefer loose leaf, I do use bags. When I do so, I heat the cup beforehand for temperature control. After pouring the water into the cup, I place a saucer on top of it so it acts like a small teapot, trapping the steam in. Do not stand there and dunk the teabag over and over the entire time, but do dunk it a few times before pulling it out in order to mix the tea up. Enjoy immediately.

Yes! For Jasmine, don't go to the full boil. Or boil, then wait to bring down the temperature about 20 degrees. Don't over steep, a few minutes will do. For Earl Grey, boil all the way and steep a bit longer, 4 to 5 minutes.

I love tea - almost any kind, but had no idea the difference in water temperature would make a difference when preparing it.
I use both loose and bags and usually just bring water to a boil, wait a couple of minutes before adding to my pot/cup. I agree about leaving the tea bag to rest in the water a few minutes before moving it around.

Everyone knows that I like tea so I'm always receiving these beautiful "tea" cups and I love them all - especially the ones with lids/tops so I do not have to hunt a saucer!

It is neat to know about your parent's background as it helps to explain how your recipes and crafts are so outstanding - yea for our parents!

What water temp would I use for herbal teas? I cant have caffeine.

How lovely to see tea advice!! I'm a true, though simple, tea-aholic! I make my own morning chai, grinding cinnamon bark, cloves, cardamom, black peppercorns in a grinder, then putting in cold water with chopped ginger.

Bring to a boil, and simmer for a couple of moments. Add loose tea, and remove from heat, allowing to stand for a minute or two. Strain and enjoy with milk/cream and sweetener. Yummmmm!

I don't like tea; the bitter kind. I am open to keep on trying. I am on blood thinner, and when my blood gets too thin, I think I can drink extra green tea. What would be the best, non bitter tea, I think I like Jasmine, but i have no idea what its vitamin K content is.
