To cool down the counter top when rolling out pastry and cookies or when making candy, chill it with ice packs. You can make your own by filling gallon-size freezer bags halfway with water. Force out as much air as possible, seal, and place them in the freezer on a cookie sheet.

For rolling out any kind of dough, I use a clean or new tube sock on your rolling pin and flour it. Also get heavy duty cotton duck cloth to roll out on, flour this as well.

You know how rolling out dough when making pizza, bread, or pie crust can be a pain. The dough sticks to everything, but the pan that you are rolling the dough in. Well, I stumbled upon an easy way that works great! When rolling out the dough on the pan, take a good size piece of plastic wrap and spray it lightly with cooking spray. With the sprayed side down, place on top of the dough. Gently push and press the dough in the pan. The plastic wrap allows you to push the dough or even roll it without it sticking to your fingers or your rolling pin. The best thing since sliced bread... rolled out bread. Lol!
When making pastry, flour the work surface then cover the pastry to be rolled with cling film, and roll out as usual. It does away with the floury, sticky rolling pin.
